Serving containers should help people identify a filling and use it comfortably. Plan the table after deciding how each food must be prepared, held and replenished; a neat arrangement is only one part of the job.
Separate preparation and service
Finish the required preparation of each filling before moving it to a serving container. Keep raw ingredients and their utensils separate from ready-to-eat food. Follow the relevant handling and temperature guidance for the actual ingredients rather than assuming every taco filling can sit out in the same way.
Give each component a place
Use a suitable container and a separate serving utensil for every filling or topping. Keep tortillas, the main filling, fresh vegetables and sauces easy to distinguish. Leave room to scoop without reaching over another bowl.
Identify commercial sauces or other products when diners need ingredient information. A separate spoon does not by itself establish that a food is free of allergens.
Replenish manageable quantities
Bring out small amounts and replace them according to the food’s storage needs. Avoid treating a nearly empty serving bowl as a reason to combine unrelated leftovers. After the meal, review what was used and adjust the next menu. An efficient table is one that serves the intended food clearly, not necessarily the one with the most containers.
